Have you ever been to Chick-fil-a? We all love Chick-fil-a in the spiffy family! Start with their awesome play place that always seems clean, add to it the nice service and smile you get from the employees, and top it off with the delicious chicken nuggets, chicken strips, and chicken sandwiches with a bit of Polynesian sauce and it is nearly heaven on earth… anyway, since we love their chicken so much, I’ve been wanting a recipe for chicken nuggets I could make at home but still feel decent about feeding to my family for dinner! Well look no further, here it is:

3 skinless and boneless chicken breasts cleaned and cubed

1 cup milk

1 egg

1 1/2 cups whole white wheat flour

2 1/2 TBS powdered sugar (optional)

2 1/2  tsp salt

1/2 – 1 tsp pepper

In a medium sized bowl that has a fitted lid, whisk the egg and the milk together. Place chicken in milk mixture, stir a little, put the lid on the container, and place in the refrigerator to let it ‘marinate’ for anywhere between 15 minutes up to 24 hours.

When you’re ready to cook…Preheat oven to 425°. In a gallon size resealable bag combine wheat flour, powdered sugar, salt and pepper. *The sugar is optional and so often I just can’t bear to see another drop of sugar being added to our day, so I skip the sugar!* Seal and shake to combine. Drain the milk/egg mixture from chicken and place the chicken a few pieces at a time in the flour mixture. Seal and shake the bag until the chicken is completely coated. Place on a cookie sheet in a single layer. When all the pieces are on the cookie sheet either spray each piece with a little cooking spray or melt some coconut oil and drizzle over chicken nuggets.

Bake for about 15 – 20 minutes. You can flip them half way through the cooking time, but I usually don’t. Let them cool for a few minutes, then  serve with your favorite sauce. Since chicken nuggets are usually deemed finger food its fun to add some sides of ‘finger’ fruits and veggies. Yummy, yummy!

Just for the record – you can fry these in some oil (I like coconut oil) and they will taste just as delish but that adds a little more fat… and why would you do that?!

I tried making these tonight, after almost 40 minutes in the oven, they still don’t seem done, any ideas whats going on?

    Oh no! I’ve never had that happen. There’s not much worse than working on a dinner that doesn’t turn out! At 425 degrees bite size pieces of chicken should cook pretty quickly. Is the chicken still pink or is it just not browning on the outside? Let me know how they turned out and if you figured out what happened!

can i use all-purpose flour instead of whole white wheat flour?
