I can’t believe how fast Easter is sneaking up on us. I didn’t feel ready for Easter until this past week we were able to go the “Easter Pageant” and it really helped me get my thoughts ready for Easter. My kids were looking for a fun Easter-ish project and we came up with these awesome cookies. They were a huge hit, especially when we smashed some frosting between two same-shaped cookies and made sandwiches. These are so fun and colorful – they would be great for a cookie basket (cookies on a stick) as a colorful bouquet too. Here’s our recipe:

1/2 cup butter (softened)

1/2 cup crisco

1/2 cup powder sugar

1/2 cup sugar

1/2 teaspoon baking soda

1 egg

1 teaspoon vanilla

2 1/4 cups flour

1/2 teaspoon cream of tarter

Mix all ingredients in a stand mixer.  Divide dough and mix in desired  food coloring. Let chill for at least 30 minutes. Preheat oven to 350*. Roll out think, cut with cookie cutters, place on cookie sheet and bake for 6-8 minutes for soft cookies or a little longer for a cookie bouquet or harder cookie. Let cool and then frost with vanilla frosting. Enjoy!
