Ever think about having a popsicle stand with your kids on a hot summer day? Me neither… until my little spiffy kid had been begging to have a stand and sell all sorts of things (paper bracelets, paper airplanes, and many other precious creations) – we decided that homemade popsicles were the easiest and most appealing product we could do together. Originally I bought a few cheap little popsicle molds to make my own healthier version of popsicles, which I did and still do (I’ll have to post some of those recipes later), but for the popsicle stand we bought more professional molds (which you can buy here) and decided to go with our very favorite flavors – which of course were not a whole lot healthier but make a very refreshing and tasty treat! These popsicles were given the highest marks from many popsicle connoisseurs :o)

For Fudgesicle-like popsicles (Chocolate, Vanilla, Banana Cream, etc)

1 large box of instant pudding (in the flavor of your choice)
1 3/4 cup milk
3/4 cup cream
I mix it in my food processor so it whips up and gets nice and creamy.

optional:

for chocolate (I especially like this for the chocolate coconut fudge popsicles) you can add:

1/4 cup or so baking cocoa
sugar to taste
Add these before or after you mix the recipe above. Then mix in coconut or other mix ins to taste (sometimes I also use coconut milk in place of the milk).

Add in any fruit and mix

One delicious mix we’ve sold a lot of  is: Strawberry Kiwi cool aid packet, strawberries and bananas added to the vanilla – its delish!

Quickly pour your mix into molds or small cups and don’t forget to put the popsicle sticks in! Freeze for about 4-5 hours.

For More “Ice Pop”-ish Fruity Flavors

2 cup hot water
1pkg jello
1pkg cool aid (complimenting flavor to jello flavor)
1 cup sugar
2 cups cold water
Any fruit you want

Dissolve sugar in hot water, then mix in jello and cool aid until dissolved. Mix in cold water. If you want to make a cream version (my kids love cherry cream and orange cream) Replace 1 cup of cold water with 1 cup of cream. If you want the popsicle to be two toned just mix the cream in with a whisk, otherwise mix it in the blender or food processor (my kids like the light and dark red in a cherry cream when I just use a whisk) – it tastes great either way. Add fruit if you prefer. Pour mixture into molds and freeze for about 2 hours, put the popsicle sticks in then freeze for an additional 2-3 hours or so.

Some examples:

mixed berry cool aid, strawberry jello, and frozen mixed berries (makes mixed berry punch)

or

strawberry jello, pink lemonade cool aid, and strawberries (makes strawberry lemonade)

or

Cherry cool aid, cherry jello, and lime juice (makes Cherry lime-aid)
