Oh yum! I can hardly get through writing up this post without wanting to make me one of these babies! These are my new favorite lunch… or dinner… or snack.

I love these wraps and the best part about them is that they are quick and easy to make. These are a go-to when I’m looking for something healthy… I mean,with lettuce, tomatoes, avocados, grilled chicken all wrapped up in a spinach wrap, that just sounds healthy, right? Here’s the recipe:

Jalapeño Ranch Chicken Wrap

1/2 a large tomato

1 or 2 small avocados

6 leafs of green leafy lettuce

3 chicken tenders (grilled)

Jalapeño Ranch dressing

salt and pepper

3 spinach wraps

Chop tomato, avocado, lettuce and chicken very fine. Did you hear me, I said fine! (It is the trick – I don’t even like tomatoes, but I do in this because I can’t taste any one of these things individually. They blend together and are so delish!). Mix in a medium bowl. Add  salt and pepper and Jalapeño Ranch dressing to taste – it doesn’t take much for me, probably just a few tablespoons. Divide mixture evenly among 3 spinach wraps. Wrap it up and eat!

They don’t sell the jalapeno ranch here, so I made do with a fire roasted poblano pepper ranch. While some of the kids complained about the tomatoes or avocado, or both – I thought they were tasty and made for a nice, light dinner. Thanks. 🙂
